Sweet n' Salty Sun Setting Snacks

You know when you have a good dinner and you think to yourself "wow, that was great. I'm good for the night".
Then not even 2 hours later, you're not tired, you may want to watch another episode, or you want to read something casual-like.
And finally it hits you: the late night munchies.
I won't deny it: I love snacks any time of day, and odds are you're here because you do too (or maybe you don't know how people can eat anything after 7 p.m.).
The unfortunate thing with this food love affair is that a lot of foods out there don't digest well enough in the hour between snacking hard and actually going to bed.
If you also struggle with finding the right night time snack that isn't the same bag of chips with salsa or pint of sugary ice cream - this is for you.
And you better believe I just ate one (okay...two) of the snacks listed below.
There's a mix of salty and sweet, giving a few options for both cravings.
1) Beet Crackers & Creamy Buffalo Dipping Sauce

1/2 tablespoon Noble Made buffalo sauce
1/4 cup Greek yogurt (if you're gross like me, use Greek God's Honey Vanilla Greek yogurt to tone down the spicy kick with a sweeter trade off)
Beets Crackers
Pour however much of the Beet's Crackers you would like into a bowl and side it off with that creamy dipping sauce.
2) 5-Ingredient Chocolatey Sun Butter Mug Cake

3 tbsp milk of choice (we use Ripple non dairy)
1 egg
2 tbsp sun butter
3 tbsp almond flour
1 tsp baking powder
1 dark chocolate sun butter cup, not even going to make this optional
Combine all ingredients (omit the sun butter cup) and mix well until smooth. Microwave for 1.5 minutes.
Top with broken up sun butter cup. Can't beat that buttery chocolate goodness!
3) Better with Oil Popcorn

Not going to lie to you: this is literally just Trader Joe's Organic Popcorn with Organic Extra Virgin Olive Oil (if you don't have a TJ's near you, these seem pretty close. Addicting like movie theater popcorn, but without the grease and shame.
Tip: drizzle some melted dark chocolate over the top with a sprinkle of Himalayan pink salt.
Want to make it festive? Add some finely broken pieces of peppermint candy.

4) Best of Both Worlds Rice Cake

Toppings:
Base: nut butter (peanut is my go-to)
Strawberries, raspberries, or banana, sliced
Honey, drizzled
Chia seeds, about 1/4 tsp sprinkled on top
5) Banana Ice Cream

One frozen banana
½ cup coconut cream (refrigerated overnight)
¼ tsp vanilla
Sprinkles to top it off (duh)
Add all ingredients (omit the sprinkles) to a blender or food processor. Blend until smooth. Scoop into bowl of choice and top off with sprinkles!
NOTE: this melts quicker then ice cream, so put your bowl of choice in the freezer to chill for 5-10 minutes before you plan to make the ice cream; this will help to keep it from melting too quickly.
