5 Ways to Brown Rice Cake

In need of some quick and simple home-made snacks that can actually satisfy your hunger without the guilt? Though, let's face it, some of the best snacks make us feel kind of gross and bloated. Damn them.
Allow me to re-introduce you to: brown rice cakes.
They don't get as much credit as your favorite chip or instant meal, but I think they deserve it.
I hardly ate brown rice cake until Sequoia started to eat solids. Turns out, I eat them more then she does.
What I love most about them is you can eat them as is, or add a variety of toppings for a flavorful plate. There's just no saying no to good food.
Sure, they might fall apart when you eat it - but so does your life sometimes, and it's still good.

1. Berry-Nutty Sweet
Toppings:
- Base: nut butter (peanut is my go-to)
- Strawberries, raspberries, or banana, sliced
- Honey, drizzled
- Chia seeds, about 1/4 tsp sprinkled on top

2. Savory Brekkie
Toppings:
- Base: Avocado, mashed and seasoned to liking (I add a little bit of pink salt and lemon juice)
- 1 boiled egg, sliced
- Everything but the Bagel seasoning (Trader Joe's)
- Microgreens
3. TCH Refresher

Toppings:
- Base: Hummus (one with lemon and garlic)
- Tomato, sliced
- Persian Cucumber, sliced
- Optional toppings: Avocado, microgreens

4. Pink, Green and Cheese
Toppings:
- Base: basil pesto
- Prosciutto (crisp by heating on a small skillet over medium-high heat until at desired texture)
- Gouda cheese, shredded
- Optional topping: pine nuts sprinkled on top
5. Pineapple Kicks

Toppings:
- Base: Non-dairy coconut vanilla yogurt
- Pineapple, thinly sliced chunks
- Chile-Lime Seasoning Blend (Trader Joe's), sprinkled on top
